Winemaking:
Harvest at night. Cold pre-fermentation maceration for 48 hours. Temperature controlled fermentation. Very gentle and constant handling of the skins during fermentation to control the extraction of tannins. After malolactic fermentation, ageing in 225 litre American oak barrels for 6 months. Very gentle filtering.
