Winemaking:
100% Syrah. A pre-fermentation maceration is carried out for 48 hours in cold. Fermentation is carried out at a controlled temperature (24ºC approx), with a very gentle treatment of the skins. Just at the end of fermentation, the wine is devatted to avoid excess tannin. After malolactic fermentation in stainless steel, it is placed in 225 litre barrels of specially selected French oak, where the tannins are polished and we achieve greater complexity. Its great acidity allows us a long and progressive ageing.
